Ingredients:
5 lb brisket, trimmed
2 yellow onions
1 cup beef broth
1/2 cup dry onion soup mix
4 tablespoons Dijon mustard
1 tablespoon brown sugar
Directions:
Slice the onions and place in the bottom of the slow cooker. Pour the beef broth over top.
Coat the beef brisket with the onion soup mix. Place the brisket into the slow cooker.
Spread the Dijon mustard over the top of the brisket.
Cover and set slow cooker to low. Cook for 9 hours.
Transfer the brisket from the slow cooker to a large roasting pan. Sprinkle the brown sugar over brisket. Place the oven rack near the top and then place the brisket in the oven. Set to broil and cook for 5 minutes.
Remove the brisket from the oven and let rest for 30 minutes.
Pour the liquid from the slow cooker and the drippings from the roasting pan into a bowl. Skim the fat and pour the liquid into a blender. Add the onions from the slow cooker to the blender. Pulse until smooth to create an au jus.
Slice the brisket and place slices on serving plates. Pour on the au jus. Enjoy!
